Lemongrass and Ginger Potato Salad
Happy Monday! We hope everyone had a fantastic weekend. It was certainly a hot one here in Wrightsville, PA!
If you picked up some potatoes at your local farmer’s market this past weekend, here is a great recipe to put them to good use! This is also a delicious “light” version of potato salad.

Lemongrass and Ginger Potato Salad
– serves 6
2 Pounds of Red Potatoes, cubed
2 Tablespoons White Rice Vinegar
2 Tablespoons Sesame Oil
4 ½ Teaspoons of fresh minced lemongrass
1 Tablespoon water
2 ½ Teaspoons fresh grated Ginger
½ teaspoon salt
1 finely chopped hot pepper
1/3 cup spring onions finely sliced
2 Tablespoons fresh chopped Cilantro
Place potatoes in pan of cold water and bring to a boil. Lower heat and allow to sinmmer for 9 minutes, drain the potatoes.
Combine the rice vinegar and the next 6 ingredients in a large bowl. Whisk together for one minute. Add the potatoes to the lemongrass mixture and toss gently to combine. Place in the frig to cool completely.
Top potato mixture with spring onion and cilantro and gently toss again.
